I bought these TWO potatos for $1.10 at the market! Very expensive right? Later i check the price at another minimart, it costs only 5 potatos for 80 cents. Although the potatos at the minimart is smaller by a bit, I *think* I kanna chopped at the market. :(
Here's the output of my chicken curry. Looks ok right? Taste edible. It's those type of instant curry with coconut loh. So cannot expect so much.Tips:
1) Must put some spices like shallots, lemon grass etc (I see my mummy doing so, I din add)
2) Always add the thick coconut extract last (Cooking coconut extract for too long will results in lumpy curry.
3) Do not cut the chicken into too small pieces (We all know that if it's cut too small, end of the day, We cannot find any chicken!)
4) Paste type Curry is better then Powder Type
5) deep-fried potatos before putting into the curry (This will prevent the potatos from "melting" away into the curry)
That's all folks

oh, and if using powder type, fry the powder with some oil first until it's like a paste, then add the potatoes etc and fry fry in the dry paste, then later add water + coconut milk. :)

Chicken curry is simple.. :)
Blend lemon grass, buakras, onion, dried chilli, 'blue' ginger and yellow ginger together (Amt depends on how much you cooking).
Fry the blended ingredients till fragrant and add curry powder to fry till fragrant and turns into paste with some water added.
Add half the packet ready curry paste and fry for a minute. Add chicken and potato to fry till cooked. Add water to fry and simmer for 20minutes, add coconut milk and simmer for another 10mintues under medium heat.
