Hello everybody, My apologises for my "disappearance"... Today, I'm feeling so happy and motivated, I'm successful in creating my first trial in Baby Pandan Chiffon Cake.
Baby Pandan Chiffon Cake Recipe is from thelazychef.
Ingredients: (Quantity will based on Mould Size)
4 eggs
210 gm sugar
Pandan juice 25 cc(add additional green colouring!) or 1 tbsp of pandan paste
300 gm plain flour
1 tsp of baking powder
1/2 tsp salt
250 ml of thick coconut milk
2 tsp ovalette
Fresh shredded coconut 1 pkt(250g)
1/4 tsp salt
1 tsp tapioca/corn flour
Steam shredded coconut for about 5 to 8 mins.
After steaming, add in salt and tapioca/corn flour and mix well. (Taste to check if you want it to be more saltier)
Place some steamed coconut into the base of a mould.
Use another mould to push the coconut into the mould and press hard on it. Do the same for all the moulds.
Beat eggs with sugar and ovalette until white and fluffy.
Mix the coconut milk, pandan juice/paste, green colour and salt in a cup.
Mix the baking powder with the flour.
Add the coconut milk and flour alternatively into the egg mixture and mix well.
Spoon mixture into prepared mould and steam on big fire for 8-10 mins.
I did not follow exactly 100% but did a little bit of variations here and there. Could not find any pandan leaves at NTUC. The good thing is, I can find grated coconuts there. Shufang, Huiling and Me were just discussing about how to get the ingredient, when my colleague told me that NTUC sells that, next to those daily counter, ie tofu, mee etc etc.

Have to Steam, then add some salt & Corn Flour

Whisk 2 Eggs, 100g Sugar, and some
ovalette

I used 150g Self Raising Flour (Mixed Flour and Baking Powder)

This mixture is the 100ml Coconut, Pandan Colouring and a bit of Salt. The Colouring has to be more Green, so that after it's mixed together with the Whisked Egg and Flour, it will turned out okay ;P

So need to add in Flour and Coconut Mixture into the Whisked Egg alternate, so that the flour will not cause the whisked egg to "fall"

Here is the mixed Product. I've forgotten to take photos of the moulds standby with the grated coconuts inside. So we have to push two moulds to compress the grated coconuts.

Here are the filled products ready for steaming. The nice PINK colour Moulds are complimentary from Shufang ;)

See... They are something like Huat Kueh hor... will Huat one... Actually I never take note of the time, this thing, can over-steam one right? as long as dun steam too much can liao... I was still thinking of Huat Kueh...

The finished product... I'm quite happy with my first attempt. Nice try, but I think I can do better next time, by not putting so much of the mixture. hee.. i think i'd like coconut a lot.

It looks a bit odd with that green. Lighter colour will be better. :)
U mean the finished product or the mixture?
both... Think the cakes are just too green - bright green, luminus green... that make them look like toys. A bit darker green will be better.
