Ah Hong's Hokkien Mee

Keelyn is a Hokkien, of course she must know how to cook hokkien mee... haha.. So happily this morning, she bought the ingredients from NTUC. When she's paying at the cashier, she realised that she took kway teow & yellow noodles :X.... Aiyoh... She dare not tell the cashier that she took wrongly, later the cashier will laugh her head off.... Gotta buy the white noodles from the supermarket downstairs liao...

Here's what keelyn bought...
  • Yellow Mee
  • White Mee
  • Squids
  • Prawns
  • Pork Belly & Bones
  • Spring Onions
Other ingredients from home...
  • Garlic
  • Eggs
  • Oil
  • Salt
First, the pork bones are boiled into stock...

Keelyn's tip on how to prepare stock...


Boil one small pot of water (enough to cover the bones) & a large pot of water (the amt of stock u want). When the small pot is boiling, put in the bones and stir erm... maybe 5 rounds... to ensure that all the bones are in contact with hot water. Then take out the bones and put into the big pot of boiling water. The small pot of "dirty" water can throw away liao. This procedure will ensure that the soup does not have a smelly pig smell.. lol.. Cook the stock for 2-3 hours... (keelyn uses a slow cooker :P) Remember to stain off impurities before using the stock.

After that all the ingredients are prepared, can start to cook liao.
  1. Put oil first, then add garlic, can also add in the root part of the spring onion.
  2. Then add eggs, remember to stir or mess up the eggs so that it becomes small pieces.
  3. Then fry the white & yellow mee (white mee should be more then yellow mee) as well. You need a big pan / wok to enable proper frying. Keelyn only got a small cute pan so can only stir, cos the pan already full liao... :(
  4. Add in the stock, then cover for a while
  5. Add salt / Pepper to taste
  6. Then add the ingredients, prawns / squid / pork belly & spring
    onions
  7. Stir fry for a while more (few times lah) as long as the seafood are cooked.
  8. It's ready to serve!

ha ha ha... you can cook "modified" hokkien mee with yellow mee and kway teow ma...

so now, what will you do with the kway teow?

Maybe cook kway teow with yellow mee another day, before it spoils
